Lecithin

Recovery of wet Lecithin is done from hydratable gums of soyabean oils, rice bran oils and sunflower oil. Lecithin is the predominant source material for food and pharmaceuticals. Food lecithin is usually de-oiled to improve its functionality. The major phospholipids as listed below are the source of the Lecithin:

  • Phosphadylcholine
  • Phosphadylethanolamine
  • Phosphadylinositol
  • Phosphadylserine
  • Lysophosphadylcholine
  • Lysophosphadylethanolamine
  • Phytoglycolipids
  • Phytosterines

The Phosphatdylcholine enriched fraction is excellent in water emulsifier and the Phosphatdylinositol enriched fraction is excellent in water emulsifier and is often used in the chocolate industry.

Lecithin is used in the manufacture of the following products:

  • Chocolate and confectionery
  • Instant and/or agglomerated products
  • Fat spreads
  • Frozen dough
  • Pharmaceutical products
