In edible oil processing, a fractionation process consists of a controlled cooling of the oil, thereby inducing a partial, or 'fractional', crystallization. The remaining liquid (olein) is then separated from the solid fraction (stearin) by means of ?ltration process.
Fractionation is the process where the crystallization of saturated triglyceride takes place in mechanical equipment called the crystallizer. Crystallized oil is further passed through a ﬁlter where the separation of solid and liquid phases takes place. The solid phase remains in the chamber. The liquid phase comes out through the taps and is collected in the storage tank.
The entire process takes place in several steps which include: Oil heating, oil charging, crystallization, ﬁltration, squeezing and cleaning of ﬁlter.
